Good Food and Time Saved

Monday, July 10, 2017 — Today is my son’s birthday.

HAPPY BIRTHDAY RICH!  We love you very much.

I have decided I will be creating a page for recipes. I actually like cooking and really enjoy trying a new recipe. However, working fulltime has a way of throwing a wrench into my plans and sometimes it can feel more like a chore.  Today I tried something new for dinner. Along with a new recipe, I tried to make sure dinner would be ready and I would not have to be exhausted cooking it.

I set out some chicken breast over the weekend. Sunday I mixed up all the ingredients and put them in the crockpot. I put the stoneware bowl in the refrigerator and since my daughter is not working right now I had her put to turn on the slow cooker around 12 pm.

When I walked into the house the aroma in the house smelled mmm mmm good! The chicken came out so tender. Served it over rice and it was delish! I think it worked out nice and was a real time saver.

I believe this would be a really good recipe to cook on the road.  When ever we go out I bring the slow cooker.   Since I am going to start saving the recipes I try, I think it will make it easier to plan for trips!

ITALIAN DRESSING SLOW COOK CHICKEN

4 to 6 Boneless Chicken Breasts

16 oz. bottle of Italian Dressing

1 tsp. oregano

Slow Cooked Chicken in Italian Dressing

1 tsp. rosemary

1 tsp. onion powder

1 tbsp. lemon juice

1 tsp. salt

2 tsp. garlic powder

1 tbsp. Italian Seasoning

½ tsp. pepper

In stoneware bowl mix all of the ingredients except for chicken.

Cut the chicken thin and put in the mixture, make sure the chicken is covered on both sides.

Cook on low approximately 5 hours.  We served over rice along with the sauce.

Next time I think I will add some bell peppers cut in strips and some onion would have cooked well in this also.
